Recipe:  Reuben Sandwich

Wednesday was the weekly visit. COFFEE was the biggest haul. Enough for two weeks, WOW.
More bagels. The veggies were pretty sickly.
This weekend the REAL St Patricks dinner. Corned Beef, creamed peas and potato, Sauted carrots. The potatoes and carrots are complements of the food bank. The corned beef was bought on sale.
HINT: When buying corned beef, always buy the flats rather than the points. The points have much more fat and in the long run, the amount of meat available to eat is much less than the flats. So while the points may be cheaper per pound, they are more expensive in the long run.
Cannot wait for the Ruebens. The rye bread, sauerkraut, and dressing were food bank. The cheese was on sale and the corned beef is left over. Nearly a free meal.

Sliced Corned Beef

Sauerkraut

Thousand Island dressing

Rye Bread

Swiss Cheese (actually any cheese will do)

Butter

On the bread layer Corned beef, sauerkraut and cheese, top with dressing.  Place second slice on tip and butter the top slice.  Place on hot griddle or skillet, butter side down.  Butter the other slice of bread.  When browned, turn over and press down gently with a spatula.  When browned and cheese is melted serve hot.
Continue working on taxes. It looks like I owe a lot because I cashed in a couple of 401(k)’s. Probably will have to borrow money to pay them off. Bummer.
On the up side, the weather is delightful, took a couple of drives to enjoy the sunshine.

A Touch Of India

Recipes:  Curried Chicken Salad, Beans and Rice

The sun is shining as opposed to RAIN, RAIN, and MORE RAIN.   However, the rain is easier to shovel than the white stuff.  AND, it is warmer, at least above freezing.

Still no renters and the house payment is due.  I suppose the food bank stuff will have to account for more than a quarter of the meals.

Lunch today was good.  All items are from food bank.

1 apple (could use two to stretch the meal without diminishing the taste)

1 can of chicken

4 T Miracle Whip

2 T of Curry Powder (From previous visit)

Pita bread

Stir first 4 ingredients together and serve on warmed Pita Halves

Hope supper will be just as good:

            1 C brown rice

3 ½ C water (can substitute chicken or vegetable broth or mix half broth and half water.  If you are a little flush this week, one of those small bottles of white wine could be part of the liquid.  HOWEVER, I don’t think that is from the food bank.)

1 or 2 can(s) Black Beans (2 will stretch for another person or 2)

1 onion

1 clove garlic

Dash hot sauce

1 can Shrimp (optional)

Soften onions and garlic in pot, stir in rice, and toast lightly (4 minutes)

Add liquid and hot sauce

When rice has absorbed most of liquid, stir in beans and shrimp to warm.

Can be served as the main dish or side.

Daughter is a vegetarian so this is for her this evening.
